Chocolate Melting Moment Cookies

Had a little bit of a baking session last weekend, and made these – they are SO good! Very moreish and very simple. Make sure that you cook them long enough so that they become beautifully crisp when they cool. This recipe was adapted from a recipe I found on

175g salted butter, very soft
60g icing sugar
2 tsp vanilla extract
150g plain flour
60g cornflour
30g cocoa powder

Preheat the oven to 180C.

Beat the butter, vanilla and icing sugar until pale and fluffy. Stir in the flour, cornflour and cocoa until it comes together as a soft dough.

Divide into 32 equal balls and space evenly on two non-stick baking sheets. Use the back of a fork to squash each ball down flat.

Bake for 12-15 minutes, or until firm to touch. Cool on tray for 5-10 minutes, before transferring to a wire rack to cool completely.
